Try these cookies, trust me you’re really going to enjoy them! They’re the perfect texture-crisp on the outside, and soft and chewy in the middle! Enjoy!
Ingredients:

1 1/2 cups (330 g) white sugar

1 cup (190 g) vegetable oil

2 eggs

1 tsp vanilla extract

1/2 c (115 g) sourdough discard

2 3/4 cups (395 g) all-purpose flour

1 tsp baking soda

2 tsp baking powder

1 tsp salt (4 g)

1 tsp (4 g) cinnamon
For Sugar Coating:

1/4 cup (50 g) white sugar

1 tsp (5 g) cinnamon
Directions:
In a large bowl, combine the oil with the sugar, and mix with a spatula until smooth
Add eggs and vanilla and mix until combined
Add sourdough starter, stirring until combined
Add the flour, baking soda, baking powder, salt, and cinnamon and mix with a spatula
Place in the Fridge for 30 min (or up to 24 hours)
Preheat oven to 180c/350 f
Form the dough into small balls (a cookie scoop works best😉) and roll each ball in the cinnamon- sugar coating.
Place cookies a few inches apart on a parchment-lined cookie sheet.
Bake for 10 minutes, until the edges are browned, but the middle still looks soft.
Let cool on baking sheets.
