Healthy Sourdough Breakfast Muffins🌞!

A healthier muffin to grab on the go for breakfast! Try your own add-ins and adaptations and let me know how they turn out! These muffins are fluffy, soft, and wholesome, and the perfect companion to your morning coffee☕! Enjoy!

 

Healthy Sourdough Breakfast Muffins

Servings:12 muffins

Ingredients:

165 g milk (pareve or dairy)

88 g Vegetable oil

75 g Honey

1 Egg

1 tsp Vanilla

100 g Sourdough Starter Discard

160 g Whole Wheat flour (you can substitute white if you’d prefer)

50 g Whole oats

2 1/2 tsp Baking powder

1/2 tsp Baking Soda

1/2 tsp salt

1/2-1 tsp Cinnamon (depending on how much you like:)

175 g Fresh blueberries OR 1/4-1/2 c Choc Chips (depending on how healthy you're feeling😉)

1 tbsp whole oats to sprinkle on top- optional


Instructions:

Preheat oven to 180c (fan).

Add all of your wet ingredients (milk, honey, oil, starter and the egg) to a bowl and whisk until combined.

Add dry ingredients flour, oats, baking soda, baking powder, and cinnamon and mix with a spatula or large spoon until combined. The batter will be pretty wet.

Stir in blueberries or chocolate chips.

Put 12 muffin liners into a muffin tin and spoon the mixture into them equally.

Optional- sprinkle the top of each muffin with some more oats.

Bake for 15 mins until golden on top and springy to the touch!
